A couple of Addy's favorites:
Apples, Pears, & Parsnips (a.k.a., "armpits")
1 apple, peeled and diced
1 pear, peeled and diced
2 medium parsnips, also peeled and diced
Option 1: In a small sauce pan, simmer the diced food in about 1 cup of apple or white grape juice until the parsnips are tender (they'll take the longest). Drain the food, reserving the liquid. Measure the cooking liquid and add enough to get back to 1 cup and bring back to a boil. Add 1 tablespoon of Minute Tapioca (not tapioca pudding mix!) and cook for about 20 minutes, until all the white bits have turned clear and the mixture is thick. Mill/grind/chop the apples, pears, and parsnips to an appropriate size and stir in the cooked tapioca. Refrigerate or freeze until set.
Option 2: Steam the diced food until tender. Mill/grind/chop to an appropriate size, or leave in diced form if your kiddo is old enough. Addy especially likes this version with a little brown sugar stirred in.
Cheese (with shredded chicken and green beans)
about 1/4 cup shredded chicken
about 1/4 cup soft-cooked green beans
about 2 tablespoons milk
about 4 tablespoons shredded cheese
Put the milk and cheese in a microwave safe ramekin and heat on low power to slowly melt the cheese, stirring frequently. Make sure the chicken and green beans are an appropriate size/texture and add to the cheese sauce. Serve on toast or crackers (or both). Note: the chicken and green beans will freeze just fine, but I don't recommend freezing the cheese sauce.
